Time to Order Your Fresh Turkey

You can now order fresh Thanksgiving turkey at the market

Ferguson Farms is now taking orders for its fresh, pasture-raised turkeys—raised without antibiotics, hormones or arsenic. Their turkeys, all hens (females), are raised and rotationally grazed at the family’s farm in Parkton, Maryland. That means the turkeys eat natural grasses and vegetation that provide “many nutritional benefits as well as an exceptional eating experience,” according to the website.

Buy a fresh oven ready pastured turkey for $4.25 / lb. within a two to three pound range.

You can pick up your turkey at the Hollywood Farmer’s Market on Saturday, November 23. The balance is due when you pick up your turkey.

Produce of the Week: Parsley, Sage, Rosemary, and Thyme
Those of a certain age may remember this song from Simon & Garfunkel’s third album, released October 1966. One gardener honors the song and the spices on her blog by providing a few legends and recipes here at http://backyardpatch.blogspot.com

Here is a sample of the wisdom she shares:
• Parsley is rich in Vitamin A and C and acts as an antioxidant. It contains flavinoids, known to help keep cancer at bay, and apigenin, which is an anti-allergen.
• Sage comes from the Latin name Salvia officinalis, which means to save or heal. It’s not surprising then that this herb is associated with good health and long life. Sage is the perfect accompaniment to sausage, cheese and fatty meats.
• Rosemary is a classic flavoring for stews and casseroles, as well as marinades, vinegar, and dressings. The Latin name of rosemary, Rosmarinus, means dew of the sea, which it gained from its coastal habitat. It gained an early reputation for improving memory and uplifting spirits and in the language of flowers became known as the herb of remembrance.
• Thyme is a symbol of courage to the Greeks and a cure for melancholy for the Romans. Today we know that it contains antiseptic and antibacterial qualities, not to mention that it is perfect in marinades, soups, stews, and casseroles as well as a tea.

Recipe of the Week :
Four-Herb Blend:
The following blend can be mixed and used as a dressing, marinade or meat rub:

3 parts parsley
2 parts sage
2 parts thyme
1 part rosemary

To make a dressing: add 1 to 2 tablespoons to 2/3 cup oil and 1/3 cup vinegar.

To make a marinade: use 1 to 3 tablespoons in a half and half blend of oil and vinegar or lemon juice.

To use as a rub: use dry and spread over all sides of meat or poultry before baking or grilling.
