Diamondback Profiles Christiane Williamscwilliams

There’s a new weekly series called “College Park Contours” in the University’s student newspaper The Diamondback that “spotlights interesting members of the community.” The June 19 issue profiles our very own Christiane Williams—a market vendor who is a north College Park resident and chair of the Hollywood Farmers Market Board.
In the article, author Naomi Harris, says, “Stitch by stitch, Christiane Williams is seeking to make the city’s dog population a little more fashionable. … She currently creates and sells special-order dog sweaters and other hand-knitted crafts and isn’t stopping at dog sweaters…— come fall, cat sweaters will be available, too.”

hfm_tomaSwiss Chard: A “Vegetable Valedictorian”  
In Maryland, the peak season for Swiss chard is May through November, and, according to the The World’s Healthiest Foods website, it is “truly one of the vegetable valedictorians with its exceptionally impressive list of health-promoting nutrients.” For more nutritional information on Swiss chard, go to http://www.whfoods.com/genpage.php?tname=foodspice&dbid=16.
In the meantime, here are a few tips for preparing Swiss chard from the same site:

  • Rinse Swiss chard under cold running water. Do not soak chard as this will result in the loss of water-soluble nutrients to the water.
  • Remove any area of the leaves that may be brown, slimy, or have holes.
  • Stack the leaves, and slice one-inch wide.
  • Boil for 3 minutes to “free up acids and … bring out a sweeter taste from the chard.

hfm_kaleRecipe of the Week: Raw Swiss Chard Wraps

  • 4 large, tender chard leaves, washed and dried
  • 2 avocados
  • 1 teaspoon of lemon juice
  • 1/3 teaspoon of chipotle spice or cayenne pepper
  • Sea salt and black pepper to taste
  • 1 cup carrots (chopped or shredded)
  • 1 cup of tomatoes (chopped)
  • ½ cup of sweet onion (chopped)
  • 4 whole-wheat wraps (optional)

Directions:
1. In a large bowl, mix avocados, lemon juice, spices, salt and pepper until creamy.
2. Chop remaining ingredients separately and add to the bowl with avocado mixture.
3. Lay the chard leaf flat and remove the stem.
4. Spoon vegetable filling into end of leaf and roll.
5. Stuff all ingredients into a whole-wheat wrap (optional).
